You probably remember your mom’s pork chops: dry, flavourless, and cooked within an inch of being edible. It was a staple meal in the dinner rotation of every family in the 90s or 2000s. We all remember smothering them in barbecue sauce and attempting to choke them down while telling mom 'it tastes great'.


Because of this, pork chops got a pretty bad rap over the years, and many of us millennials can't fathom having to eat another dry pork chop. But it’s time for a redemption era, where we take a boring classic and elevate it into something creative and flavourful.



Butterflied Pork Chops: What They Are & How to Cut Them


A butterflied pork chop is simply a thick pork chop that’s been cut almost in half horizontally, then opened like a book. This increases surface area, helps it cook more evenly, and gives you room for creative fillings or toppings.


How to butterfly a chop:

  1. Place the chop on a cutting board and hold it steady.

  2. Using a sharp knife, carefully slice through the fat cap, leaving about ½ inch uncut along the opposite edge.

  3. Open it like a book you’ve just got yourself a butterflied chop!

Our Favorite Stuffed Pork Chop Recipes

Here are some of our favourite pairings that simple, delicious, and easy to make.


1. Asparagus & BBQ Sauce

  • Sear the butterflied chop until golden.

  • Top with roasted or sautéed asparagus and a drizzle of your favorite barbecue sauce.


2. Caramelized Onion & Gruyère

  • Cook onions low and slow until deep golden brown.

  • Layer over the chop and sprinkle with shredded Gruyère for melty, nutty flavor.


3. Traditional Dressing

  • Spoon your classic stuffing/dressing mix right over the chop for a cozy, comforting combo reminiscent of Sunday dinners.


4. Mediterranean: Feta, Sun-Dried Tomato, Oregano & Olives

  • Mix crumbled feta, chopped sun-dried tomatoes, olives, and a pinch of oregano.

  • Spoon over the chop for a bright, tangy Mediterranean twist.


5. Spinach & Feta

  • Marinate pork chops in greek dressing.

  • Whip feta with a little bit of brine to make it spreadable.

  • Add feta to inside of pork chop and overstuff with spinach (it will cook down)


6. Jalapeño, Bacon & Cream Cheese

  • Combine softened cream cheese, diced cooked bacon, and finely chopped jalapeño.

  • Spread over the chop for a spicy, creamy, indulgent treat.
